Jet City Pizza opening on Tacoma’s Sixth Ave

Coming to Tacoma’s Sixth Avenue neighborhood is Jet City Pizza Co., a small regional pizza chain based in Mount Vernon with six locations from Snohomish to Newcastle. It will open its seventh location at 3602 Sixth Ave, the former home of Garlic Jim’s, which closed in February. Find updates on the restaurant’s social media here, but if all goes as planned, the official grand opening is scheduled for Saturday, May 15, 2021.

General manager William Mueller, who many of you will remember from Babblin’ Babs Bistro in the Proctor neighborhood, said the crew has been in training this week. 

Jet City Pizza Co. probably is best known for its beer crust, but Mueller said that Jet City also has a niche in gluten-free pizzas. The gluten-free pizza dough is created at its commissary kitchen in Everett and is kept separate from the wheat-based pizza dough to minimize cross contamination. He said that all pizzas, containing gluten or otherwise, are dusted with cornmeal and rice flour before going into the oven. Using only cornmeal and rice flour means that there’s less risk of cross contamination for pizzas cooking in the same oven, he said. 

“We have gluten-free pans, paddles, peels, and a prep area,” he said.

Wings are also gluten free. “They are coated in a rice flour and rice starch,” he said. However, “But definitely be careful about the sauces for what people can and can’t have.” He said that staffers will be able to answer questions about which sauces have wheat products. 

For vegan diners, they’ll have Daiya cheese as an offering. 

The menu includes pizza, grinder sandwiches built on baguettes fresh baked at the store, salads and wings. 

The hand tossed beer crust is currently made with a Scuttlebutt red ale. (Back in the day, when the chain opened in 1994, it was made with Redhook ESB.) There’s also a thin-and-crispy crust, as well as that gluten-free crust. 

The company used to offer a buttermilk parmesan crust, but that won’t be offered at the Tacoma store, Mueller said. Other stores have pastas and ribs, but Jet City in Tacoma will not offer those, Mueller said. 

In-house delivery will be a three-mile radius from the store on Sixth Avenue.
